      White Chocolate Cake with Roasted Strawberry Cream Cheese Frosting Recipe

      (This is my fun idea of a version of the chocolate covered strawberry with a twist! Enjoy! )

      Cake:

      Ingredients

      • 5 oz. White Chocolate chips
      • 1 ½ c. milk
      • 2 ½ c. all- purpose flour
      • 2 ½ tsp. baking Powder
      • ¼ tsp. salt
      • ¾ c. salted butter, room temp.
      • 1 ¼ c. granulated sugar
      • 3 lg. eggs, room temp.
      • 2 tsp. Vanilla

      Directions

      • Oven: 350
      • Melt white chocolate with the milk on low heat. Stir until smooth and cool to room temp. Reserve on the side.
      • Stir the dry ingredients together.
      • Cream Butter, sugar and one egg until fluffy! Add the other 2 eggs one at a time.
      • Alternately add flour and chocolate/ milk in three additions to creamed mixture. End with flour. Batter will be beautiful and light!
      • Divide batter in 3, 6” greased and floured pans.
      • Bake 35-40 mins. Test with a toothpick. Cake will be a nice brown around the edges and a good dome shape. Cool in pans 10 mins, unmold and finish cooling on a rack.

      Roasted Strawberries:

      Ingredients

      • 1 quart fresh strawberries ( washed and dried)
      • 4 Tbs sugar
      • 1 tsp Vanilla

      Directions

      • Oven: 375
      • Stem and quarter the berries. Place on a cookie sheet lined with aluminum foil .
      • Sprinkle with sugar and Vanilla evenly.
      • Roast for 35-40 mins. The berries will darken and the juice will be thick. The house will smell amazing!!! I usually do these the night before and store in the fridge.
      • Measure out about ½ c. berries and puree. Any remaining berries are amazing on Vanilla ice cream or in yogurt.

      Strawberry Cream Cheese Frosting: Intensely strawberry!!!

      Ingredients

      • 6oz. Cream cheese, room temp
      • 6oz. salted butter, room temp
      • 3c. powdered sugar
      • 1tsp. Vanilla
      • ½ c. Pureed, roasted strawberries

      Directions

      • Cream , cream cheese, butter and 1c. powdered sugar until smooth. Add in the gradually the remaining sugar.
      • Beat in Vanilla and puree.
      • Frost cake layers.
