Apple Cupcakes with Browned Butter Cream Cheese Frosting Recipe
Cake: preheat oven to 350
Bowl #1
• 3 c. All Purpose Flour
• ¼ tsp. Salt
• 1 ½ tsp. Baking Soda
• ½ tsp. Baking Powder
• 1 tsp. Cinnamon
• ¼ tsp. Nutmeg
• ¼ tsp. Allspice
– Mix together in a bowl and set aside
Large Bowl #2
• 8 oz. melted Butter ( salted is fine)
• ¼ c. Corn Oil
• 1c. Granulated Sugar
• 1c. Brown Sugar
• 1c. Apple Sauce
• 3 lg. Eggs room temp
• 1 ½ tsp. Vanilla Extract
– Beat, in a large bow, the above 7 ingredients until smooth
Bowl #3
• 2c. Shredded Apples
• 1/2c. Buttermilk
– Stir together in a third bowl
1) Alternately beat the dry ingredients ( bowl #1)and Apple/ Buttermilk (bowl #3) mix into the melted butter/eggs ( large bowl #2) Until just smooth.
2) Fill lined cupcake pans 2/3 full. Bake for about 15 mins. Check with a tooth pick and it should come out clean.
3) Cool completely. ( Makes about 30+ cupcakes)
Frosting
• 8oz. Cream Cheese, room temp.
• 4oz. Browned Butter, cooled down in fridge. Until semi-solid again. Or use room • temp butter if you don’t want to brown butter.
• 1 ½ + tsp. Buttermilk, or Milk.
• 1 tsp. Vanilla Extract
• 2 c.+ Powdered Sugar ( taste it and make it to your taste)
1) Cream the butter and Cream Cheese.
2) Beat in sugar alternating with buttermilk until you get a nice smooth texture.
3) Ice cupcakes and get frosting on your fingers and sample it a little!
