CHICKEN SKEWERS WITH PEANUT BUTTER SAUCE
Ingredients
- 1 cup chunky peanut butter
- 1/2 cup low-sodium chicken stock
- 1 lime, juiced
- 1 tablespoon soy sauce
- 1 teaspoon red chili flakes
- 1/2 teaspoon cayenne
- 1 tablespoon honeySalt and freshly ground black pepper
- 2 pounds chicken tenders
- 2 tablespoons vegetable oil
- 1 teaspoon allspice
- Special equipment: bamboo skewers
Directions
Combine peanut butter, stock, lime juice, soy sauce, hot chili flakes, cayenne and honey in a small saucepan. Stir to combine and bring to a simmer over mediu, heat, sirring occasionally. When peanut butter has melted, season, to taste, with salt and pepper and remove from heat.
Preheat grill.
Skewer chicken tenders, brush both sides with oil and season with salt, pepper and allspice. Grill chicken until is it browned on both sides and cooked through, about 4 minutes per side. Serve with peanut sauce.
